Recipe of the Week: Balsamic Vinaigrette

Hello everyone! Chef Ted here, homemade vinaigrettes are a big staple in our home. Once I taught my mom a good ratio to guide her, every week she makes some new experiment or makes one of her past favorites. These are great ways to add some bold flavors. Below I have a classic favorite of guests at the classroom and use this as a baseline for making your own. Check out the Rocking Ratio​ blog for this week to learn more about ratios!

Recipe - Serves 2

Ingredient List

3 T -- Onion, Chopped Fine

1 T -- Garlic, smashed and turned into a paste

1/4 Cup -- Extra Virgin Olive Oil

1 T -- Honey

1 tsp -- Whole Grain Mustard

1/8 Cup -- Sherry Vinegar

To Taste -- Salt & Pepper


Directions
  • Measure out each ingredient into separtate containers. (Always do your Mise En Place!)
  • In a small saute pan, cook the onion in garlic in olive oil until soft and just starting to brown. Turn off the heat.
  • Add the garlic, onion, honey, mustard, and vinegar to a medium size bowl and mix until combined (a whisk works here since you need it next.)
  • Once combined continue to whisk while you VERY, VERY SLOWLY drip in the olive oil. Continue whisking it in until fully emulsified or combined. (this is the most important step, see Vinaigrette blog for details)
  • Season to taste with salt and pepper.

You can store this in a little bottle if you make a larger batch in the refrigerator.
