Recipe of the Week: Pan con Tomate

Posted by Ted Marris on

Hello everyone! Chef Ted here, schools are starting up soon and I figured something quick, easy, and delicious for the home would be nice. Whether you buy the bread from the store or chose to bake it yourself I think this dish will leave you satisfied.

Pan Con Tomate - Serves 2

Ingredient List

4 pieces -- Bread (I like to slice open a focaccia)

3T -- Olive Oil

2-4 Cloves -- Garlic, keep whole

1 -- Tomato

to taste -- Salt

to taste -- Olive Oil (Extra Virgin)

Directions
  • Grate the tomatoes on the large opening of a cheese grater into a bowl.
  • Slice your bread open and drizzle on olive oil.
  • Place under the broiler until gold brown and crispy.
  • Take the whole garlic clove and rub it on the surface of the bread. The rough surface will act like a tiny grater as you watch the garlic "melt" into the bread.
  • Season your tomatoes with salt and olive oil until its amazing. (This may take more than you think to fully season the tomato.)
  • Spoon over the bread and serve right away.
Equipment List
  • Bowl
  • Food Grater (box or stick)
  • Sheet Pan
  • Knife and Cutting Board (If you don't have the grater or food processor, the Chefs Knife and Board will do it all with a little extra patience!)
