Hello everyone! Chef Ted here, a couple weeks back from vacation and I already miss juicy dumpling so I figured this week lets make a gyoza filling together. To keep things simple we are just going to focus on an easy and flavorful vegetable filling. Let me know if you would like to see a simple dumpling wrapper recipe and if so I will bump it up the list otherwise using store bought ones to make life easy at home is perfectly fine. For those of you that would like to add a meat to this, I added a note at the bottom of the directions. Once you have wrapped and sealed the dumplings well if you want to freeze them, just place them on a sheet tray and freeze them individually before tossing in a ziplock or something airtight to store. Gyoza Filling (~60 smaller dumplings)
Ingredient List
2 T -- Sesame Oil
3 Cloves -- Garlic, minced
1 T -- Ginger, Fresh, minced
1 -- Onion, chopped
1/2 -- Leek, washed and rough chopped
2 -- Carrot, shredded
8 -- Mushrooms, minced
2 Cups -- Cabbage, rough chopped
2 T -- Soy Sauce
1 T -- Rice Vinegar
to taste -- Salt and Pepper
Directions
- Finely chop vegetables by pulsing in food processor.
- Saute mashrooms, onions, carrots and saute for 2-3 minutes until lightly browned. Then add the leek and cabbage and cook an additional 5 minutes or until veggies are cooked through.
- Add garlic, ginger, and seasonings and cook an additional minute, season to taste, then set filling aside to cool.
For those who want to add meat, pull back some on the veggies and add your favorite ground meat (dont forget to season the meat). I would cook the meat in my pot then pull it out into a bowl while I cook my veggies in the rendered fats and fond from cooking the meat. Fond is the little yummy crispy brown bits in the bottom of the pan. After the veggies are done you can mix the meat in and adjust seasoning.
