Hello everyone! Ready for another fun thing to do at home? Now that you have all that Tallow from the other blog post this week. I love going out and just ordering a side of fries to split with friends. I figure, besides cooking your proteins with it, we can now use your tallow to make some amazing fries at home and customize them to your liking.
Beef Tallow French Fries
Ingredient List
1 -- Large Russest Potato
as needed -- Salt
as needed -- Tallow
as needed -- Other toppings (parmesean, garlic, seasoned salt, etc.)
Directions
- Cut the potato into your desired fry shape.
- Parboil potatoes and dry. Keep the potato firm enough to not fall apart.
- Freeze potatoes. (I keep them on my cooling rack and throw the whole thing in once they coll to room temp. Do not place warm potatoes in your freezer as it will warm the freezer itself.)
- Fry the frozen potoaes at 375°F for 2 minutes then pull and reheat oil. Drop them in for a second fry and go until golden brown or desired crispiness.
- Toss in salt (and seaoning if desired) immediately after frying.
- Enjoy.
- Once oil cools you can use a strainer and cheese cloth to pull any bits of food out, or use the water wash technique found in the Tallow Blog to get every little part out and clean up the fat.
Equipment List
- Sheet Tray
- Cooling Rack (could be paper towels on a plate)
- Cutting Board
- Knife
- Pot to fry with
- Spider/Skimmer/Something to pull fries from the frier
