How do you make food taste great AND healthy at the same time?

Healthy is less about the food and more about the cooking techniques to make it tasty. Boiled chicken is bland, properly seared chicken is robust with flavor. You’ve probably heard “Fat is Flavor” when you’re cooking. Whoever said that forgot to mention herbs, spices, and chilis add flavor and depth beyond compare.

We’re going to cook straight out of my personal experience of once being overweight and now being in the best shape of my life. They say (whoever “they” are) to “never trust a skinny chef.” That is true until you’ve met one who used to be heavier and has cooked his way thin.

The common misconception is that “healthy” is boring and bland. In this class we will set you straight. We’ll be using techniques such as searing and seasoning to accomplish our goals. I will share some of my signature spice rubs with you as well.

What is a Stromboli and where did it come from….?
Should there be sauce on it…in it…or both?

There are so many questions worth answering and so many great tastes worth eating in this class. I can’t wait for you to join us.

The art of Stromboli is versatile, from making it into an appetizer, enjoying for the main meal, or a decadent dessert. You could also make a few, cut slices and send it out in you or your kids lunch box. There are so many uses for Stromboli we could hardly list all of them.

We are going to take you through the process from scratch, making fresh dough, hand stretching fresh mozzarella, and so much more.

Summer is a perfect time to introduce this class because nothing pairs better than homemade Mozzarella, sun ripened tomatoes, and fresh picked basil.

In this class we are going to make homemade Mozzarella. We will learn how to use rennet to start the process and how to finish the Mozzarella into a few shapes.

You will learn ways to broaden mozzarella’s versatility at home from enhancing appetizers for dinner parties to using it on pizza’s or flatbreads. I should warn you…once you taste the joy of fresh Mozz….you will never be able to eat anything less.
