In this completely hands on class participants will learn how to care for their knives, sharpen them, and most importantly learn and practice the proper knife techniques to make you faster, safer, and the chef youve always dreamed of being.

Participants can expect to make just about every aspect of a pizza from the fresh kneading their own pizza dough to making fresh mozzarella and sauce. In the end all of your ingredients come together to make quite possible the best food on the planet.

Hand Rolled Sushi: Watch the mystery of sushi unfold in the palm of your hands. In this Hand Rolled Sushi Class you will learn the techniques to cooking perfect sticky rice. From there every participant will conquer the basic sushi rolls.

How do you make food taste great AND healthy at the same time?

Healthy is less about the food and more about the cooking techniques to make it tasty. Boiled chicken is bland, properly seared chicken is robust with flavor. You’ve probably heard “Fat is Flavor” when you’re cooking. Whoever said that forgot to mention herbs, spices, and chilis add flavor and depth beyond compare.

We’re going to cook straight out of my personal experience of once being overweight and now being in the best shape of my life. They say (whoever “they” are) to “never trust a skinny chef.” That is true until you’ve met one who used to be heavier and has cooked his way thin.

The common misconception is that “healthy” is boring and bland. In this class we will set you straight. We’ll be using techniques such as searing and seasoning to accomplish our goals. I will share some of my signature spice rubs with you as well.

In this class we take you deep into Italian roots you may be unfamiliar with....from polenta, to braised beef with wine, and mint potato dumplings.

This class is nothing familiar but still authentic, old world, Italian greatness.
